We had two sweet friends of the family and my mom over for lunch on Sunday and I had SUCH fun cooking for everyone! We had fetti for lunch, which is just so yummy in the summer, and a dessert buffet. Yes, a dessert BUFFET. It was a beautiful thing.
My favorite dessert to make in the summer is strawberry shortcake, so of course I started with that. Have you made strawberry shortcake before? My gosh, it's about the easiest dessert EVER to make. First, start with a box of Betty Crocker Pound Cake Mix.

Like most cake mixes, all you need besides the contents in the box are eggs and milk (nope, no oil is needed). I poured my mixture into a [very well Pammed- yes it's a verb] bundt cake but you could also make loaves or a traditional square cake, if you'd like.
While the cake was baking (mine took about 30 minutes on 350 degrees), cut up strawberries and rinse. I used two big containers of strawberries for five adults.
Drain the strawberries well and put them into a bowl. Generously coat the guys with sugar and let set in the fridge until you're ready to use, at least an hour. The sugar will magically become a strawberry syrup!
So, you've got the pound cake baking and strawberries are marinating in the fridge. You need homemade whipped cream to top this mother off, right? For our group of five, I used the following:
- pint of whipping cream (I really should have used heavy whipping cream but it still worked out)
- 1 tsp of vanilla
- a bit less than 1/4 cup of granulated sugar
When it's time to serve, cut bundt cake and top with strawberry syrup, strawberries and whipped cream! Your belly will thank you.
Oh- I forgot about the dessert buffet part, didn't I? Well, one of our lovely guests brought a gigantic, homemade, New York style cheesecake as well. And, we had un motherload of four-layer birthday cake left over so we put that out too. It was quite the delicious end to a great time together with friends and family. Isn't that what summers all about- fresh fruit, late nights and lots of laughs with the ones you love? I certainly think so. :)
